New Years Cake or Rice Cake

3 large eggs
1 cup(8 oz or 240 ml) evaporated milk
1 cup (8 oz or 225 g) white sugar
1 cup (8 oz or 225 g) sweet rice powder
1 tsp (5 ml) vanilla (optional)
Directions:
Put all ingredients into a blender. Blend until smooth and airy. Pour mixture
into a greased round cake pan. Steam for 15 - 20 minutes or until set.

Increasing the amount of rice powder will make the cake stiffer. You may try
other extracts than vanilla to get a different flavor or no vanilla for a bland
cake.

One can bake in the oven at 400 F or 200 C for 20 to 30 minutes, but this will
change the color and texture of the cake.
