Nanking Spiced Duck

Makes 1 to 2 servings.

            **  Ingredients  **

125g (4oz) Coarse salt
3 tsp Szechuan peppercorns
1.75Kg - 2Kg (4 - 4.5lb) Oven ready duck
Cucumber twists to garnish




            **  Procedure  **

1) Place the salt and peppercorns in a frying pan over high heat for 
ten minutes to brown, taking care not to burn.

2) Cool the peppercorns and salt.

3) Rub this mixture thoroughly over the inside and outside of the duck.

4) Wrap lightly in foil and store in the fridge for three days.

5) Remove the foil and place the duck on a rack in a roasting pan.

6) Cook in a preheated, moderately hot oven, 200 degrees centigrade or gas mark 6 for 1.25 to 1.5 hours until golden brown.

7) Transfer to a warmed serving dish and garnish with the cucumber twists.

8) Serve immediately.
